Kolsch: Take Two

The last Kolsch attempt was pretty good. This brew attempts to build on it. The following objectives: - Make the color lighter - To that end, test some process changes -- namely not boiling the DME/LME for very long ~ 10 minutes before (add just before flavor hop. - Add slightly more, and different flavor hopping. - Find out if the fourth pitch of my White Labs Kolsch yeast is still good - Make so damn beer :)

Batch size: five gallons Boil size: two gallons Boil time: 60 minutes Steep for 20 minutes @ 150F:
  • 12 Oz. flaked barely (head)
  • 8 oz. two row malt
At Boil: Franking hopping:
  • 1.03 AAU Styrian Golding (.5 oz @ 2.07 AA)
  • 1.8 AAU UK W.G.V (1oz @ 4.5% AA * .8 (whole hop))
  • 2.56 AAU Sazz (1oz @ 3.2% AA * .8 (whole hop))
  • Total:5.39 AAU
At 45 minutes:
  • 1 tsp. Irish moss
  • 1.5 oz. (flavor hop)
  • 6 LBs Pilsen Light DME.
Yeast: White Labs WLP029 German Ale/Kölsch pitched at 72F.
